What makes something toffee, rather than caramel or fudge
All three start from the same basic idea — sugar, cooked with fat, sometimes with dairy added — but the method and temperature change everything. Toffee is cooked to the hard-crack stage, around 150°C, which drives off almost all the water and leaves a texture that's hard or firmly chewy depending on how it's finished. Caramel is cooked to a lower temperature, the soft-ball stage around 115°C, and typically has cream folded through it, giving a softer, more stretchable bite. Fudge takes a different route entirely: the cooked sugar syrup is beaten as it cools, which deliberately encourages the sugar to crystallise into countless tiny grains — that's what gives fudge its soft, slightly sandy crumble rather than toffee's chew or caramel's stretch.
Toffee is generally thought to have taken its current form in 19th-century England, though the exact origin of the word itself is genuinely unclear — some trace it to "taffy," an old dialect word for something sticky. What's certain is that by the Victorian era, boiled toffee sweets were a fixture of British sweet shops, and that basic hard-crack method hasn't really changed since.
