Rodolphe Lindt opened a small chocolate factory in Bern in 1879, at first making the same hard, bitter chocolate as everyone else. The story goes that he left a mixing machine running by accident over a weekend, and came back to find the chocolate had turned smooth and glossy — the accidental discovery of conching, the process that's still used to make fine chocolate melt properly. He sold the secret to Zurich chocolatier Rudolf Sprungli in 1899, forming the company known today.
