Why Hershey's tastes different
The tang in Hershey's milk chocolate — the thing British and European chocolate doesn't have — comes down to how the milk is processed before it goes into the recipe. Hershey's uses a controlled process that breaks down milk fat slightly (lipolysis), producing small amounts of butyric acid, the same compound (in much larger concentration) that gives parmesan and rancid butter their sharpness. In the tiny quantities present here it reads as a mild tang rather than anything unpleasant, and it's been part of the recipe since Milton Hershey set the process in the early 1900s — not a fault, just a different starting point to British milk chocolate.
The brand behind it
The Hershey Company was founded in 1894 in Lancaster, Pennsylvania, by Milton S. Hershey, who had already built a career in caramel before turning to chocolate. He went on to build an entire company town — Hershey, Pennsylvania — around the factory.
