"Sour" covers an enormous range, from a pleasant tang to something that makes your jaw ache. Here's roughly where things sit, and why.
First, what's actually doing it
Three acids do most of the work in sour confectionery:
- Citric acid — the mildest. Bright, lemony, fades fast. In almost everything.
- Malic acid — sharper and longer-lasting. Green apple sourness.
- Tartaric acid — the aggressive one. Grape-derived, and it lingers.
The other variable is where the acid sits. A sour coating hits immediately and fades. A sour centre arrives late and stays. That's the difference between a sweet that's briefly sharp and one that keeps going.
Tier 1: pleasantly tangy
Happy Cherries Z!ng — a sour sugar dusting over a sweet cherry gum. Sharp for two seconds, then it's just a nice cherry sweet.
Fizzy bubblegum bottles — more fizz than sour. The tingle is the point.
Tier 2: properly sour
Tangfastics — the benchmark, and still the one most people mean by "sour sweets". Citric and malic acid, sugar-dusted, in a mix that includes cola bottles, cherries and crocs. Sharp enough to notice, mild enough to eat a bag of.
Rainbow Strips Z!ng — the sourness is in the coating, so peeling them layer by layer spreads it out. Also vegan, which is rare in this category.
Tier 3: this is a commitment
Sour Sparks — this is where it steps up. The sourness is in the centre, not the coating, and it's tartaric and malic acid together. Two flavours per piece, a long chew, and a sour hit that arrives after you've committed and doesn't let go.
Vidal sour slices — cherry or strawberry jelly under a heavy sour sugar crust. The crust does the damage.
A note on the enamel
Worth saying plainly: acid softens tooth enamel temporarily. The standard dental advice is to rinse with water afterwards and wait before brushing — brushing straight away scrubs softened enamel. This isn't a reason to avoid sour sweets; it's a reason not to eat them constantly through the day.
